Abstract

Probiotics are a group of microorganisms that have been isolated from the gut micro biota and have been used as functional foods in the human diet. Lactic acid bacteria (LAB) are the most accepted and safe probiotic bacteria to be used as a functional food and have the best probiotic potential. Lactobacillus sp., Bifidobacterium, and Lactis are the LAB most frequently used as probiotics. They are involved in modifying gut pH, antagonizing pathogens through the production of antimicrobial compounds, competing for pathogen binding and receptor sites as well as for available nutrients and growth factors, stimulating immunomodulatory cells, and producing lactase. The most important point is that they are proven to be safe, cost effective, and could interfere with the microbial infection. The present study was taken up to determine the effect of supplementation of prebiotics on biochemical, sensory and viability of lactic acid bacteria in the foxtail millet based probiotic beverage.
